I thought I'd swing a lifestyle post your way today and tease your tastebuds with some delicious home baked Vanilla Chocolate Chip Cookies. I decided to put the lady biscuit cutter that I had bought from Tiger to good use and whip up some amazing treats. Beware: These are incredibly tasty. And addictive...
The Ingredients
250g of Butter
140g of Caster Sugar
1 egg Yolk
2tsp of Vanilla Extract
300g of Plain Flour
Chocolate Chips
Other Decorating bits
The Recipe
Simply add a 250g lump of warm butter with 140g of Caster Sugar. Mix in one egg yolk and throw in a couple teaspoons of vanilla extract and get mixing. Sift 300g of Plain Flour into the mix (this is seriously muscle aching work) and mix again. Then use your hands to slightly knead the mixture into a dough.
Once you have yourself a fat lump of dough, grab yourself a rolling pin and place your dough onto a surface that has been dusted with flour. Also remember to dust your rolling pin with flour too, or else things will be getting messy. Add your chocolate chips and roll. Don't make it too thin. A medium thickness will do. Stamp out your shapes and place them onto a baking tray lined with grease proof paper. And bobs your uncle your nearly done.
Leave to cook in the oven at 180 °c for 15 minutes. Then leave to cool.
The Decorating
Just to note: These taste AMAZING straight out of the oven. There is no need to decorate them. But its fun to give these cookie women a bit of colour. So me and my sister gave them all a quirky make over! This is definitely a recipe to try out in your kitchen at home. These cookies have crisp edges and gorgeous soft centres. They taste SO good. To decorate these ladies, we used vanilla buttercream frosting, pre bought coloured icing and sugar butterflies.
